My lover, Pumpkin Soup

One day while roaming the internet I happened upon The Pioneer Woman‘s blog. I immediately fell in love. Its just that simple. I love her blog. Moving on. I made her pumpkin soup and it has since become my lover! This soup feels like a warm, soft blanket, fuzzy socks and comfy clothes on a cold, windy, rainy, dreary day. Now, I don’t know about you but this summarizes what a lover feels like to me! 🙂 So, we are lovers and when you make this 5 ingredient soup you too, will be lovers.

Let me make some disclaimers: I did not roast whole pumpkins, core them, separate the seeds, use the delicious pulp, puree in a blender or use an immersion blender like the lovely Pioneer Woman does.

I used canned pumpkin. Like I do (if it looks high maintenance but is actually low maintenance then it’s Danita!)

Also, I did not have nutmeg on hand or pumpkin seeds so I did without the seeds and used cinnamon in place of the nutmeg. Without these items the soup took my breath away. I had several helpings. We don’t need to discuss how many. My kids asked for 3rd’s, somehow a portion found its way into my purse and is at work with me and another adult in my home added some to their lunch. I was little testy about that.

The soup is sweet, smooth, silky and has a calming warm finish. I know that sounds weird but you have to try it for yourself. Then you’ll say “It does have a calming warm finish!” 🙂

Here’s what you need:

20121204-132653.jpgCanned pumpkin, maple syrup, heavy cream, vegetable broth and cinnamon.

5 steps to lover soup:

1. Pour the vegetable broth into a pot.

2. Add the pumpkin.

3. Add maple syrup to suit your taste and heat thoroughly.

4. Add heavy cream and a few pinches of cinnamon.

5. Its ready, brace yourself!

I added a little cream and cinnamon garnish. Enjoy guys!
