
I am venturing into a new cooking style. Mediterranean! I went to Israel almost two years ago and fell in love with everything I experience especially the food. Fresh veggies, great breads and the best Olive Oil that I had ever tasted. I left the trip with a seed of an idea in my mind “Eating like this all of the time would be wonderful” I am just now getting around to realizing this idea. I plan to make lamb meatballs tonight stuffed into warm pitas with hummus and salad! (Great, now I’m hungry.)
This is sauteed mushrooms with tomatoes, avocado, and parsley then drizzled with extra virgin olive oil. It was so delicious. My kids ate it up! I had to steal a slice for myself. LOL!
